    Basque omelet

    Ingredients:

    - 8 eggs

    – 30g of Butter

    – 1 Red Pepper

    – 1 Green Pepper

    – 1 Clove of Garlic

    – 30 ML of Olive Oil

    – Salt (moderate)

    – cayenne pepper to taste

    Preparation:

    1. Cut the peppers in half, remove the seeds and cut into slices.
    2. In a frying pan heated with olive oil add the peppers and garlic and sauté for about 10 minutes and set aside.
    3. Beat the eggs in a bowl and season with salt and cayenne pepper to taste.
    4. In another frying pan, heat the butter and pour in the beaten eggs and let it set a little. Add the peppers, distributing them evenly. Cook for another 2 minutes.
    5. Roll up the omelet and then serve.
    6. Enjoy your food.

    Preparation time: 10 to 25 minutes.

    Yield: 1 large serving

     

    Spinach Omelet

    Ingredients:

    – 1 Cup of chopped Spinach

    (+/- 30 Grams)

    - 3 eggs

    – 1/2 chopped onion

    – 1 tablespoon of grated white cheese

    (+/- 6 grams)

    – 1 tablespoon of chopped parsley

    – 1 Teaspoon of Olive Oil (5 ML)

    – Salt (Moderate)

    – Black pepper to taste

    Preparation:

    1. Beat the eggs with a fork in a bowl until you get a homogeneous mixture.
    2. In a frying pan heated with olive oil, sauté the onion until golden. Add the chopped spinach and leave just until wilted.
    3. Add the beaten eggs, chopped parsley and season with salt and black pepper to taste.
    4. Let it become firm and golden on both sides.
    5. Serve immediately and enjoy.

    Preparation time: 10 to 15 minutes.

    Yield: 1 large serving
