     Green Corn Pamonha is a very popular and traditional sweet from country cuisine, a delicious Brazilian tradition. Produced with green corn on the cob, still raw and grated. Once ready, the sweet is wrapped in the corn straw and cooked. It has an incomparable flavor and is very tasty.

     Ingredients:

    5 ears of corn with straw

    ¼ cup fresh grated coconut

    1 cup (tea) of sugar

    1 pinch of salt

    Preparation:

    1. Remove the husks from the cobs and be careful not to tear them.

    2. Place water in a pan and let it boil. Sink the shells for 1 minute and remove, reserving them. Discard the water.

    3 . Refill the pan with water and bring to a boil.

    4. Then prepare your candy. Start by grating the corn, using a box grater and using a large bowl. When finished, scrape the cob with the back of a knife to drain any remaining juice.

    5. Sieve the corn using a spoon to crush the grains in the sieve. Squeeze the pomace well with a spoon until all the liquid is removed. Throw away the bagasse.

    6. Mix the grated coconut into the remaining liquid in the bowl. Add sugar, salt and mix well. It will have the consistency of cream.

    7. To assemble the tamale, place two leaves from the corn house on the counter. You will have to form a tube with the two sheets. Place one facing each other and fit the sides together, closing the 2 parts and forming an empty half cone.

    8. Make sure the bottom is closed and that no liquid has leaked through it.

    green corn tamale9. Hold the cone firmly, leaving about 3 cm of straw below your hand. Fill the cone with corn broth until 2 cm of straw remains above it. With one hand, hold this part, closing it and tie it tightly with a piece of string to the part where the liquid ends.

    10. Do the same process until the cream is finished.

    11. Place the tamales on a plate.

    12. Place the tamale packets in the pan with boiling water and let them cook for more than 30 minutes. Using a slotted spoon, remove the packets and drain well.

    13. Let it cool until the package is firm.

    And that's it!!! You can enjoy your tamales. Ah, there are those who prefer them hot. Whatever your taste, you choose!
