    Chicken gizzards are rich in protein and low in fat. It is also a source of iron, important vitamins and minerals for the body.

    Acebolado chicken gizzards:

    Ingredients:

    1 kg of chicken gizzards

    2 meat broths

    2 onion heads

    2 spoons of soy sauce

    2 spoons of margarine

    2 garlic cloves

    Preparation:

    1. Clean the gizzards well.
    2. In a pressure cooker, add the butter and chopped garlic cloves and let it fry.
    3. Then add the gizzards, letting them fry a little.
    4. Add the meat broth and top up with water until it almost covers the gizzards.
    5. Let it cook under pressure for about 15 minutes on low heat.
    6. Remove from pressure, return to heat and cook, adding chopped onions and soy sauce.
    7. Let it cook until the water dries.
    8. Remove from heat and then serve as a main dish or appetizer.

    Chicken Gizzard in Sauce

    Ingredients:

    1 kilo of chicken gizzards

    1 chopped onion

    1 chopped tomato

    2 cloves garlic cloves

    1 bell pepper

    Paprika to taste

    cumin to taste

    Green chili or parsley to taste

    1 drizzle of oil or olive oil

    Boiling water as needed

    1 can of tomato sauce

    2 chicken broth tablets

    salt to taste

    Pepper to taste

    Method of preparation:

    1. Bring the water to a boil along with the chicken broth.
    2. Add all the seasonings and oil to the pressure cooker and let it cook well.
    3. Then add the gizzard and let it sauté well.
    4. Combine with water.
    5. Add salt and pepper.
    6. Add the tomato sauce.
    7. Leave it under pressure for 30 minutes.
    8. Remove the pressure and leave for another 10 minutes without pressure to thicken the broth.
    9. Serve with white rice and couscous, or if you prefer, with bread, it's delicious.
    10. Be careful with the salt, as the chicken broth already contains salt.
